Freeze-Ahead Breakfast Burritos

The problem is you may not have much time to prep a protein-rich breakfast of wholesome ingredients every bright-and-early school morning!
Never fear. Freeze-ahead breakfast burritos are one breakfast option coming to the rescue.
These burritos offer 18 grams of protein, plus fiber from the whole wheat tortilla and spinach. It reheats in the microwave in minutes so you can have a delicious, warm, hearty breakfast ready to power you through your mornings in minutes.
Plus, you can play around with the ingredients, adding in different veggies, or different meats or beans for even more protein.
Here’s how you make it:
Ingredients:
12 large eggs
2 teaspoons extra virgin olive oil
2 cups spinach
1/4 cup onion, diced
6 whole wheat tortillas (8 inch)
1/2 cup cheese of your choice
salt and pepper to taste
Directions
Whisk together eggs, salt and pepper
In a medium-heat pan, heat the olive oil. Add the onion and cook until transluscent. Add the spinach and cook until wilted. Add the egg mixture and scramble until the eggs are set.
Lay out tortillas on aluminum foil. Add egg mixture, and sprinkle each of the six burritos with an even amount of cheese. Ideally wait until all ingredients are room temperature before wrapping to freeze
Wrap the burritos and store in the freezer. They will keep for easy weeknight breakfasts for 3 months.
To reheat, unwrap the burrito and place on a microwave-safe plate. Cover with a paper towel and defrost on medium (50%) for 1-2 minutes. Turn on high and microwave for about 1-2 minutes more until heated through.
